Homemade Donuts


On Labor Day we had a breakfast picnic (our favorite kind of picnic). Our assignment was to bring donuts. So last Sunday we made donuts...actually Spudnuts (because they have mashed potatoes in them). They were delicious. They take quite a while to make (they have to rise 3 times) but if you have the time, definitely worth it. I thought I would share the recipe with you.


1 tsp salt
2 Tbsp Yeast in ¼ cup water
½ cup sugar
½ cup shortening
1 cup mashed potatoes
1 pt. Milk, scalded
Nutmeg (optional)
3 eggs, beaten
5 or more cups flour

Dissolve yeast with 1 tsp. of sugar in very warm water (¼ cup) and let it grow for a few minutes (it will look bubbly and spongy). Then, mix the the rest of the ingredients and half the flour, in a large bowl and let cool. After it has cooled, add the yeast mixture. Next, add the rest of the flour until you have a non sticky ball of dough. Let it rise over double, then punch it down and let rise again. After that, punch down the dough again and roll out to ½ inch thick. Cut out the donuts and let rise yet again. Cook the donuts in a couple inches of hot oil (abt. 365 degrees) until golden brown.

Top with glaze, powdered sugar, or cinnamon sugar.
